Meet our Head Chef - Lee Carroll
It's often the case that people who work in hotels love to travel and, despite having lived in Jersey for over 25 years, it's the same for our Head Chef Lee Carroll. The big difference between Lee and his colleagues, however, is that Lee's travels take place in the kitchen where everyday he oversees the preparation of menus that include dishes from every corner of the globe!
Having lived in Jersey for a quarter of a century, Lee, who is originally from Sheffield, is definitely an honorary Jerseyman! He's been Head Chef at the Merton since 2004 and during that time has seen the hotel develop into the island's most popular family resort hotel.
As Head Chef, Lee focuses on making sure there's a sufficient variety of great food to keep our guests coming back for more, no matter how long they've stayed at the Merton. He takes great pride in the range of food available and is never happier than when he hears people complimenting the food.

From Italian classics at Bonetti's, hearty British breakfasts and roast meals at the Belvedere, to casual favourites at Jersey Joe's Diner, all of our menus have been designed by the Head Chef.
