Local delicacies make a welcome return to Greenhills
Since opening our doors in early February we've been blessed with an abundance of sunshine and record-breaking temperatures, as well as the odd spring storm. The weather may be unpredictable at the moment, but one thing that's a constant here at our country house hotel is a dedication to using the very best local ingredients and delicacies.
The Jersey Royal returns
The unseasonably warm weather has done wonders for Jersey's most famous ingredient.
In our opinion, the Jersey Royals dug in March are the most flavoursome and delicate of the entire season, making the spring months the best time to experience them.
Our Head Chef Lukasz Piestrasz loves the Royal, and he's currently busy designing a new a la carté menu that'll once again celebrate the Royal in new and delicious ways.
Local crab season not far away
Spring also sees local spider and chancre crabs return to the island's inshore waters. As the weather improves, local fisherman haul in their pots on a daily basis, providing us with the freshest local crab and lobster to use in our popular seafood dishes.
Spring's a fantastic time for a country escape to Jersey. The beaches are quieter, the weather's pleasant and the very best local ingredients make regular appearances in our restaurant.
